CHARLOTTE, N.C. (News Release) — The Mother Earth Group announces its newest restaurant, Mariposa, will open for dinner beginning Oct. 15, 2021. Located at the Mint Museum in Uptown Charlotte, Mariposa is an intersection of food and art, based on the belief that both are capable of bridging gaps and bringing the world closer together. Reservations for dinner are available to book on Mariposa’s website, mariposaclt.com, with plans to add lunch and brunch hours in the coming weeks.

Spanish for butterfly, Mariposa represents a transformation of the restaurant space and concept, led by Mother Earth Group founder, Jill Marcus. Marcus and the Mariposa team curated a menu based on her travels around the globe, meant to be shared around the table.

Featured dishes include Street Corn Fritters with sweet corn, serrano, cotija, crema, smoked paprika, and cilantro; Lamb Belly Bulgogi Lettuce Wraps with seared lamb belly, sticky rice, kimchi slaw, roasted peanuts, sweet mirin sauce; Smoked Trout Steamed Buns with hickory smoked NC mountain trout, house-made steamed buns, herbed honey butter, and Lusty Monk whole grain mustard; Mediterranean Crudo of daily catch with tzatziki, shaved cucumber, sweet Calabrian chili vinegar, and fleur de sel; Gullah Paella with crisped Carolina gold rice pilaf, andouille, chorizo, gulf shrimp, fresh daily catch, oysters, soffrito, and saffron; Piri Piri Chicken with African birdseye chili marinated roasted chicken and cilantro-lime sauce and a 100 Gardens Salad featuring greens from 100 Gardens’ aquaponics garden project at The Innovation Barn. Last but not least, guests are reminded to save room for the sweet course with an inspired pastry menu from Chef Sam Carrasquero-Chappelle.

Executive chef Jonathan Moore leads the culinary team, while Advanced Sommelier and Master Maitre D’Brad Grubb leads the bar and service team. Guests of Mariposa will experience a modern, yet relaxing space with sweeping views, plush couches, black and white decor, and artwork by Charlotte muralist Owl. Believing that the art curates the space, Marcus seeks to feature more local and emerging artists with rotating art selections in the restaurant.  Mariposa is located at 500 S.
